Niki Segnit, a former successful food marketer, decided to create a complete guide to flavor pairings. The Flavor Thesaurus is a list of 99 popular foods with different combinations - classic and lesser known. There are 980 flavor pairs in total, and recipes are provided for 200 of them. All ingredients are divided into 16 thematic groups. For example, “cheese”, “seafood”, “fried”, etc. For each combination of tastes there is an article with a culinary, historical and author’s background. In addition to classic combinations such as pork - apple, cucumber and dill, you can find in the dictionary modern pairings - goat cheese and beets, lobster and vanilla, as well as undesirable combinations: lemon and beef, blueberries and mushrooms, etc. The publishing design is preserved in pdf A4 format.
